Tempus IPA – Sacch Trois
This is the first in a line of rotating Tempus IPAs brewed with different wild yeasts, and/or bacteria with different hops each time. This batch is fermented with Saccharomyces “Bruxellensis” Trois, and dry hopped with Simcoe, Ella, and Motueka. The ultimate goal is to identify the perfect Tempus Ipa.
Tempus IPA – Sacch Trois pours hazy straw colour, with a thick white head. Aromas of under-ripe pineapple, grapefruit, passion-fruit, blackberry, and lime. Taste is smooth, with a full mouthfeel from oats and wheat, with a pleasant bitter finish, and some after-notes of classic “brett” phenolic notes. Dry and refreshing.
