As if hewn from solid granite by centuries of glacial erosion, Aquavitza is as clean and clear as the Norwegian sea air that bites at your cheeks on a late spring day. The fresh chill and delicate salinity mingle with sea herbs, rock samphire & sea rosemary, before gusting in with hints of bruised apple skin fortified with liquorice root and dill.
On the palate an almost tannic, dry, sour & stewed apple, peel and all is infused with herbal caraway and fennel so full of crisp, bright acidity that eventually yields to a stoney mineral, meltwater palate cleansing finish.
Brewed in November 2015 from diluted Skull King wort, infused with coriander, cubeb, fennel, caraway, star anise, orange zest, and bramling cross hops. Aged for 16 months in an Aquavit barrel.
